- ABOUT THE WINE: "From a vineyard to the South East of Cowaramup, this was wild fermented in barrels without temperature control. This funky ferment with full solids took place in mostly older barriques and a couple of new. We then let the wine rest on its fine lees for 10 months in barrel before bottling without filtration." ABOUT THE PRODUCER: Based in Western Australia's Margaret River wine region, Nick (Maker) and Sarah (Master) make single vineyard, low-intervention wines with left of centre varieties and techniques. The wines are made with a light touch, avoiding fining and filtering while being sensitive to their needs rather than imposing pre-existing recipes.
