- ABOUT THE WINE: William Fèvre's AC Chablis is one of the great bargains of the wine world. It's expression of place and consistency from vintage to vintage make it a go to for Chardonnay lovers the world over. It is produced from vines with average age of 50 years old and is vinified in stainless steel.
- ABOUT THE PRODUCER: William Fèvre has become one of the biggest land owners in Chablis with 78 hectares of prestigious vineyards, of which 15.9 hectares are classified as Premier cru and 15.2 hectares as Grand cru. With holdings in six of the seven Grand cru appellations, no other producer can claim such a wide array of Chablis’ finest vineyards. The vineyards are carefully managed to preserve their quality. Limiting yields is a given, and the vines have been cultivated using organic methods for many years. The Domaine carries out harvesting by hand and uses a combination of stainless steel and old oak to vinify their wines, with the Premier and Grand Cru wines seeing a greater percentage oak for added richness and complexity.
