- TASTING NOTE: Stunning Bourgogne blanc here, and with real personality. Vincent Couche's effort from the northern parts of Burgundy expresses the chalky mineral soils of the region perfectly, and a portion of the wine aged in amphora adds complexity and touch of oxidative weight which is immensely attractive. The finish on this wine is long and salty and calls for oysters!!
- ABOUT THE WINE: This Bourgogne Blanc hails from the chalk and flint soils of Molesme, just east of Chablis, which is best known for Crémant de Bourgogne. Vincent aged this wine in a mix of 1/3 amphora and 2/3 old oak for two full years.
- ABOUT THE PRODUCER: The South of Champagne has often been lost to the shining, bigger houses which dominate the north. But, if you're game to venture just two hours south from Epernay, and only one hour from Chablis, you'll find the incredible wines of Côte des Bar. It is here in the lesser-known and authentic "south" you'll find Vincent Couche - grower, vigneron, artisan. Couche, quite simply put, is very intimate with his vineyard. He knows each vine, each plot of land, each slope, farming all 13 hectares biodynamically cross two terroirs: Buxeuil and Montguex. He also farms a 14 hectare vineyard in the north of Burgundy, in the commune of Molesme, which is in biodynamic conversion. His aim through biodynamic farming is to express the richness and complexity of his land to its full potential. Harvest is strictly by hand, sorted directly in the vineyard, with only ripe and healthy berries reaching the cellar to be pressed. Alcoholic fermentation uses only natural yeast, followed by vinification with little or no sulphites.
