- TASTING NOTE: "Sourced from two vineyards, basket pressed, fermented on lees and aged in foudre and barrique. So refined, so Beechworth. Offers a classic picture of regional chardonnay intensity delivered delicately and fine edged. Bright citrus to the fore, quince, melon and stone fruits with a juicy lemon pastille note that adds a tangy succulence. Creamy lees texture with added nougat flavour is a lovely feature across the middle palate, matched to mouth-watering acidity. - ABOUT THE WINE: Fruit sourced from two vineyards, both planted in the ‘90s with classic Ordovician soils - a mixture of mudstone, shale, and granite. Handpicked, basket-pressed and fermented on lees. Fermented and aged in a combination of large-format oak (foudre) and barrique, some new. The structure and integrity of the fruit is intense. ABOUT THE PRODUCER: Chris Catlow was born and raised in Beechworth, Victoria and developed a curiosity for wine making in his teens. His interest was nurtured by Barry Morey at Sorrenberg while he worked with him on vintages before going on to complete a double degree in Viticultural Science and Wine Science at Latrobe University in Melbourne. His early passion for Chardonnay stayed with him as he went on to complete seven vintages on the Mornington Peninsula (with Kooyong Estate, Portsea Estate and Paringa Estate) and five in Burgundy. Sourcing quality grapes from growers across Victoria, Sentiō Wines invites the drinker to understand the varietal through the lens of where it was grown, and the conditions it experienced during the vintage it was harvested in.
