  • TASTING NOTE: It features brooding restrained fruit characters of red currant, blackberry, bramble, pink peppercorn, and sage leaf with complexing savoury elements of clove, cedar, and cigar box. Suppleness on the palate combines with a defined ferrous character and flavours of berry compote, smoked meats, Szechuan pepper, and cocoa nib.
  • ABOUT THE WINE:  All fruit was hand-picked, hand-sorted, de-stemmed, crushed and tipped direct to open fermenters. Stalks were added back to select parcels of Cabernet Sauvignon and Merlot for added complexity. Vats were hand-plunged or run-off a maximum of once per day to facilitate very gentle extraction and integration of colour and tannin. Cuvaison length ranged from 5 days to 5 weeks on skins. Vats were pressed individually, settled overnight then racked to fill a combination of new and seasoned premium French barriques. All components were aged as singular batches prior to blending pre-bottling. Aged in 100% French oak (65% new) 225-litre barriques (principally from Seguin Moreau, Saint Martin, Taransaud, Bossuet, Ermitage and Doreau cooperages) for 18 months. Levantine Hill
  • ABOUT THE PRODUCER: This is the most ambitious project in the Yarra Valley since the establishment of Domaine Chandon a quarter of a century ago. It is the venture of Lebanese-born Elias (Eli) Jreissati and wife Colleen, Eli having amassed a fortune as a property developer, that business continuing apace. Levantine Hill has two vineyards, the larger (18ha) and older established by Soo Son in 1995, and purchased by Levantine Hill in 2010. The second vineyard fronts Hill Road with a little over 5ha of young vines. All the major varieties of the Yarra Valley are planted on one or other of the two vineyards, but the Soo Son vineyard is the more important from a business viewpoint. It has provided space for a cellar door, restaurant and winery designed by Fender Katsalidis, who created Hobart's avant garde, and technically awesomely challenging MONA (Museum of Old and New Art), and the Eureka Tower in Melbourne. The ground-hugging, futuristic buildings, their roof line reminiscent of a stealth bomber, are visible from the Maroondah Highway, and easily accessed via Hill Road. James Halliday
