TASTING NOTE: "Inspired by Bill Lark's journeys to Japan, and meticulously crafted with passion and precision, our Tasmanian Single Malt whisky is finished in rare and precious Mizunara oak casks, embodying a harmonious blend of two esteemed whisky cultures. Renowned for their scarcity and distinctive flavour profile, the Mizunara Rare Cask Series invites you to savour the timeless elegance and unparalleled richness of our craftsmanship, seamlessly blending the heart of Japan with the soul of Tasmania. Mizunara white oak is highly prized because the cost of logs is quite high since it often takes 200 years or more for a Mizunara tree to mature enough before it can be harvested for cask barrels. The Japanese government also restricts the felling of Mizunara trees under the age of 80, making this type of Japanese oak even more difficult to come by for barrel production. This necessary passage of time imbues the wood with unique qualities that, in turn, impart extraordinary characteristics to our whisky. Enticing flavours of freshly baked apple pie, creamy French vanilla slice, and sweet incense. Batch 02 unfolds on the palate with a lingering hint of affogato, fragrant tobacco, and a rich finish of buttery oak spice." Lark
- ABOUT THE PRODUCER: The vision of producing a Tasmanian malt whisky was born in 1989 on a trout fishing trip in the highlands of Tasmania. Bill Lark's father-in-law, Max, produced a wonderful bottle of single malt, and as they enjoyed a drink in the park at Bothwell surrounded by Georgian buildings, barley fields and the gentle flowing of the Clyde River, Bill remarked to Max, “I wonder why there isn’t anyone making malt whisky in Tasmania?” This question stuck with Bill, as well as his equally curious wife Lyn, leading them to inquire into the details of obtaining a distillation license. This inquiry lead to the discovery of Australia’s antiquated distillation laws and eventually to their amendment. Thus, in 1992, the Lark household became the first Australian distillery to produce single malt spirit in 154 years. The spirit continued to grow and evolve, leading to the creation of a rich Tasmanian Single Malt Whisky aged in small casks. Finally in 1998, after years in the making, from Bill and Lyn’s kitchen table to Davey Street Bond Store, the first Lark Distillery Single Malt Whisky was released commercially.
