  • TASTING NOTE: Styled for early drinking - which is not always the case at this Domaine - expect pure aromas of fresh orchard fruits, white florals and a whisper of wet pebble minerality. It's a high-impact Pouilly-Fumé, intensely flavoured with stone fruits, minerality and an appealing back-note of grapefruit bitterness. The lengthy finish is driven by mouth-watering chalky acidity.
  • ABOUT THE WINE: Cropped from the Domaine's younger vines from a selection of biodynamic lieux-dits, the vineyards cover the gamut of Pouilly's soil types (including, limestone, silica and flint). The grapes were primarily whole-bunch pressed with some crushing for structure, and aging took place in stainless steel tanks on the lees, for between six and eight months.
  • ABOUT THE PRODUCER: The Domaine as it is today was shaped by Jonathon Pabiot, who returned to his family's winery in 2005 after studying at (and dropping out of) viticultural school before going to working in Faugères for Didier Barral. Unwilling to work conventionally, the young grower pulled together 3.5 hectares of vines and began to work organically, independent of his father Didier. Initially sceptical of his son’s methods, it was not long before the elder grower accepted his son’s wines had outshined his own. Within two years, he also began the road to organics. By 2010, father and son joined forces (and names), to create Domaine Jonathan Didier Pabiot. In 2016 the Domaine became the first biodynamically certified producer in Pouilly-Fumé. Centred around the stony caillottes of Les Loges, the vineyards stretch across the entire appellation, with mature vines set across the villages of Villiers, Charenton, Tracy-sur-Loire and Saint-Laurent-l’Abbaye. The soils of Pouilly-Fumé vary considerably, and this geologic range also provides access to mature vines on both Kimmeridgian marl and silex, an allowance used to full advantage in a range of single terroir bottlings.
