- TASTING NOTE: "Slightly deeper in colour, with extra weight and ripeness from the well-exposed Vaillons site. This is very well balanced by plenty of brisk acidity. Lots of density here, and concentration for longer ageing. A distinctive style of Vaillons but one that will have wide appeal. (Drink between 2024-2028)" 92 points - Andy Howard MW, Decanter
- ABOUT THE WINE: After a long and delicate pressing, a cold settling of about twenty hours, the fermentation took place at around 16° to 18° Celsius using indigenous yeasts. We carry out the malolactic fermentation on fine lees from November to mid-April then a light fining and filtration on earth in order to obtain a clear and stable wine before bottling by us at the estate. The aging is done exclusively in stainless steel vats to preserve the freshness and fruitiness of the wine. These vats are thermoregulated which allows fermentations to be carried out at low temperatures in order to best develop the aromas of the wine.

ABOUT THE PRODUCER: Frédéric Gueguen arrived in 2003 in Préhy to work with Jean-Marc Brocard, whose daughter Céline he has married. A significant part of Domaine Gueguen's vineyards come from her mother's holdings in and around St-Bris. Frédéric is also from a wine clan, being related to the Boudhin, Goulley and Durup families. They have used no herbicides for the last five years and are now setting out on organic certification, from 2020; they are also planning to use natural yeasts. Harvesting remains mechanical. The white wines are all vinified and matured in stainless steel. Jasper Morris, Inside Burgundy
