- ABOUT THE WINE: Sourced from a few vineyards in the centre and south of Margaret River. The vineyards in the centre of the region give riper, more generous fruit characters, while the southern vineyards lend an almost Rhone austerity, while still retaining lovely aromatics. The Shiraz and Grenache grapes are fermented separately in open fermenters. Shiraz is destemmed, and the Grenache is fermented as whole bunches. Viognier (white) bunches are deftly sprinkled across both red ferments. The Shiraz is pressed into old barrels mid-ferment to avoid harsh alcoholic extraction, while the Grenache grapes finish an extended fermentation on their skins. Both techniques promote the gentle extraction of flavour, colour and tannins. Each component is matured for 12 months in a mix of old and ex-Cognac-filled oak puncheons and clay eggs. The wine is blended, then minimally fined and filtered before bottling.
- ABOUT THE PRODUCER: Stuart Pym's winemaking career commenced more than 30 years ago when he moved to Margaret River to help his parents with their new wine label Sussex Vale. This vineyard has since become the well-respected Hayshed Hill. His winemaking experience includes some of Margaret River’s best loved names including Voyager Estate (1991-2000), Devil’s Lair (2000-2008) and Stella Bella (2008-2013). With his partner Janice, Stuart started Suckfizzle in 1996 and Stella Bella in 1999. In 2013 he handed over the Stella Bella winemaking reins and moved to Flowstone in a permanent capacity. Based in Forest Grove, just south of the Margaret River township, Flowstone is named for the famous limestone caves of the region in particular Lake Cave, with was originally known as Queen Of The Earth.
