- ABOUT THE WINE: Made from estate-grown grapes, the de-stemmed fruits are fermented for 7-11 days at temperatures between 22-25°C with gentle cap management through pump-overs. The wine is then matured in a combination of old and new French and American oak barrels for 12-24 months, with minimal intervention throughout the process. The result is a classic Greenock Shiraz.
