- ABOUT THE WINE: This village-level Volnay comes from five parcels at the top and foot of the hillside. The plots at the top have a light, chalky-clay soil while those at the bottom have deeper clay solis. Average vine age is 30 years old. Grapes are hand harvested and sorted, then fermented in open vats for about two weeks before aging twelve months in oak barrels, roughly 15-25% new, with no fining or filtration to preserve the wine's natural character.

ABOUT THE PRODUCER: Domaine Jean-Marc et Thomas Bouley farms roughly eight and a half hectares spread across 29 plots in Volnay, Pommard, and Beaune, one of Burgundy's most respected family estates. Thomas Bouley joined his father in 2002 and took over full responsibility a decade later, earning comparisons to top names like Lafarge and d'Angerville for his meticulous, near-obsessive attention to each vine. Farming is organic and sustainable, with raised canopies and minimal hedging that keep the fruit healthy and well aerated through the growing season.
