Vinous with a strong structure, suppleness and a perfect balance.The NV Brut Nature Blanc Assemblage, a blend of half Chardonnay and half Pinot Meunier grown on north-facing limestone soils, is made without any addition of sulfur dioxide. The nose is shy, but the palate delivers melted butter and creamy, fine mousse on a body of creamy red apple flesh. This Champagne has a tenderness and flowing sinuousness that make it wonderfully fluid, creamy and salty with exquisite but brisk mellowness. Bottled with zero dosage. Disgorged: July 2025. - ABOUT THE WINE: 50 % de Chardonnay, 50 % de Meunier, 100 % from the Cuvée (first press). 100 % done in thermo-regulated stainless steel vats. No use of added sulphites, settling is done without enzymes, no tanin nor coal, no chaptalisation. Spontaneous alcoholic fermentation (indigenous yeast) at 17°C and spontaneous malolactic fermentation (indigenous bacteria) at 20°C. Once ready, wines are not finned (means clarified) before bottling, no acidification nor deacidification.

ABOUT THE PRODUCER: Champagne Chavost is a cooperative winery in the village of Chavot-Courcourt, currently led by the young and dynamic chef de caves Fabian Daviaux, who took over in 2019 at the young age of 30. Founded in 1946 by an original group of around 20 growers, the co-op now comprises the holdings of over 70 multi-generational growers. Until Fabian started, the winery resembled many co-ops in Champagne with its growers largely selling fruit to larger houses. With Fabian in charge, all of that changed. He convinced the co-op's members to take all 5.5ha of their collective organic holdings and embark on a new journey: he would create a range of wines made entirely without additives or sulfites. Starting with the 2019 vintage, Fabian crafted a range of zero-sulphur wines intended to highlight the terroir and varietal flexibility seen on the hillside of Chavot. In addition to not adding sulphur, the wines are not chaptalised, there are no added enzymes or tannin, zero addition of Dosage and all wines undergo malolactic fermentation. Fabian Daviaux has redefined the concept of a co-op as his numerous growers have committed to his preferred biodynamic viticulture, in turn creating beautifully pure, ripe and delicious Champagnes. What's more, with strong vineyard work comes the need for little - if any - sulfur addition, and most of his wines are never sulfured at all. In the winery, the grapes are allowed to ferment naturally in stainless steel tanks after pressing, with only the Coteaux Champenois Blanc and Rouge seeing time in barrel. The rest of the range is crafted to be immediately enjoyable, with incredible freshness and purity of fruit.
