- ABOUT THE WINE: Domaine Bernard Defaix is the largest single owner within the Côte de Léchet 1er Cru, making this wine a benchmark expression of the cru. The vineyard is ideally positioned, facing southeast and overlooking the village of Milly. The grapes come from 60-year-old vines. Approximately a quarter of the wine is fermented in old barrels, (with the remainder in stainless steel), introducing subtle oxidative notes that enhance the wine's fruity and mineral complexity. ABOUT THE PRODUCER: Bernard Defaix started with only 2 hectares in 1959, and the estate remains a family-owned business committed to sustainable and organic vine growing—a challenging task in Chablis—as well as minimal intervention winemaking. Specifically, they have a strong focus on soil protection. Today, the domain spans 27 hectares, including Premier Cru vineyards (Côte de Léchet, Vaillons, and Lys), Chablis (village appellation), and Petit Chablis. Bibendum
