- ABOUT THE WINE: Traditional method, with up to 2 years on lees. 100% Chardonnay Blanc de Blancs. In the cellar, Bellebonne follows traditional méthode champenoise practices—hand-picking, whole-bunch pressing, extended lees ageing and minimal dosage—crafted with precision and restraint. The wines show remarkable poise and detail: crystalline acidity, fine bead and savoury depth balanced by elegance and length.

ABOUT THE PRODUCER: Bellebonne is Natalie Fryar’s passion project. She spent 14 years at Jansz, establishing herself as one of Australia’s top sparkling makers while gaining an intimate knowledge of Tasmania’s premium sites. She crafts her elegant and sublime Bellebonne cuvées in minuscule quantities from pockets of grower vines in Pipers River. To finance her first solo vintage, she sold a house, worked waitressing shifts and drove her cleaner’s Ford Festiva to Tassie with her red Kelpie on the front seat. In Jan 2023, Natalie found a permanent home for Bellebonne at Evenfall Wines in Legana, near Launceston, with whom she shares a cellar door. Evenfall wines are made down south at Tas Vintners, so Natalie has full run of the winemaking facilities, which she cohabits with husband and Wellington & Wolf winemaker Hugh McCullough. Natalie Fryar, ‘Australia’s Sparkling Queen’, has devoted her career to crafting exquisite wines. Her passion, combined with her knowledge of Tasmanian fruit from making sparkling in Tasmania for many years, creates sparkling wines with detail and precision. Natalie Fryar established Bellebonne with the sole focus of creating Australia’s best sparkling.
