- TASTING NOTE: "Meaty, gamey, ripe red berry, sweet cherry, cinnamon buns, clove and dark chocolate drinking powder all going on here. A bit of warmth, some breathiness, but the general sweet fruit/savoury mesh works well and delivers a full experience of medium-plus-weight shiraz. - ABOUT THE WINE: "Forest Hill Vineyard Block 9 forms the cornerstone of the blend, with the balance of the wine sourced from two other sites. A small component of estate grown Malbec also contributes. Shiraz was picked (hand-picked and selective harvester) then de-stemmed into a combination of open fermenters, maintaining a high proportion of whole berries. We chill the fruit at the destemmer to allow for a few days of cold soaking prior to fermentation. One parcel was selected based on stem ripeness to be kept separate for 100% whole bunch fermentation. Fermenters were pumped over or plunged by hand once or twice a day. As soon as primary fermentation was complete the wine was then pressed to large format oak foudres (2500 and 3000L) and 500/600L barrels. The wine was blended and bottled after 12 months." - ABOUT THE PRODUCER: Forest Hill Vineyard has a unique place in the history of Western Australia’s wine industry, being the first cool climate vineyard planted in the state in 1965 as an experiment by the Western Australian Department of Agriculture. The original vineyard was planted with Riesling and Cabernet cuttings sourced from the Houghton's property in the Swan Valley. The property was purchased by the Lyons family in 1996 who embarked on a program to rejuvenate the old vineyards and plant appropriate new ones.
