This year, 80% whole bunches were included. In the crucial early days of vinification, Rosalind foot stomps the ferments three times a day to ensure each berry is quickly but gently popped, maximising the juice’s exposure to skins and stalks. Ferments are fast, and the wine is promptly pressed, settled and racked to neutral 5000-litre French oak foudre for maturation.\u003cspan\u003e \u003cstrong\u003eBibendum\u003c\/strong\u003e\u003c\/span\u003e\n\u003c\/li\u003e\n\u003cli\u003e\n\u003cstrong\u003e ABOUT THE PRODUCER: \u003c\/strong\u003eOne of Australia’s most humble and innately talented winemakers, Luke Lambert is obviously inspired by his experience making wine in Piemonte and Australia yet firmly believes that “...the shape of a wine should be governed by what soil you’re on, the aspect, the amount of sunshine and rain.” In other words, the personality of a wine will be dictated by its “place”. Lambert’s source vineyards (in poor, rocky and elevated pockets of the Yarra Valley) therefore manage to bring out their unique signature in the final cut.\n\u003cp\u003eAll Lambert wines are handpicked and of single-vineyard origin. They are sublimely perfumed, with moderate alcohols, fresh acidities, powdery tannins, and limited oak influence.
