The light toast, larger format oak brings depth and texture in the mid-palate, allowing the fruit to expand and carry through the full length of the wine.\u003cstrong\u003e\u003cspan\u003e Domenica\u003c\/span\u003e \u003c\/strong\u003e\n\u003c\/li\u003e\n\u003cli\u003e\n\u003cstrong\u003eABOUT THE WINE: \u003c\/strong\u003eThe 2025 season was temperate, with a fairly cool and dry growing season. Warm, dry weather in late January and into early February allowed the grapes to fully ripen in excellent condition. Yields were high and the quality was exceptional.\n\u003cp\u003eThe 2025 Domenica Estate Chardonnay was handpicked, over the course of 10 days, by block and clone in mid February. The fruit was crushed, pressed and chilled in stainless steel overnight. The juice fermented in a mixture of 600 litre demi-muids and 228 litre barriques. As usual, the new oak component is around 20%. \u003cstrong\u003e\u003cspan\u003eDomenica\u003c\/span\u003e \u003c\/strong\u003e\u003c\/p\u003e\n\u003c\/li\u003e\n\u003cli\u003e\n\u003cp\u003e\u003cstrong\u003eABOUT THE PRODUCER: \u003c\/strong\u003e The Domenica vineyard was first planted in 1996, an accord of family and friends. The original planting consisted of Chardonnay, Roussanne and Pinot Noir on the steeper south facing section of the property. Ensuing years saw a joint venture between Michel Chapoutier, Peter Graham and his family to expand plantings focussing on Shiraz and Nebbiolo. \u003cbr\u003eDomenica Winery was officially launched in 2012 after Peter became sole owner and manager of the vineyard and property. From years of intimate experience farming this site, Peter has expanded the early plantings of Chardonnay and Nebbiolo which so successfully express the shallow granitic soil. Gamay joined the lineup in 2022 and Chenin Blanc in 2024.\u003cstrong\u003e\u003cspan\u003e \u003c\/span\u003e\u003c\/strong\u003ePeter Graham has been making wine since 1999, when he began working in vineyards and cellars in Beechworth. During the early years, he studied oenology at Charles Sturt University while working as an assistant winemaker nearby until 2012. With more than 25 years of experience working on this granite rich vineyard site, Peter brings an intimate perspective to the celebrated Beechworth region.
