After fermentation the wine is aged on the lees under fleurette for 1 year in 100-year-old foudres (5000 litres).\u003cstrong\u003e \u003c\/strong\u003e\n\u003c\/li\u003e\n\u003cli\u003e\n\u003cp\u003e\u003cstrong\u003eABOUT THE PRODUCER: \u003c\/strong\u003eClos Cibonne is one of 18 Cru Classé growers in the Côtes de Provence AOP, and is in fact the most southerly. The estate’s 15 hectares of vineyards are located a mere 800 metres from the coast and are surrounded by hillsides in the base of a bowl that faces the sea. This topography creates air circulation extends the growing period whilst cooling the vines. The soil is a mixture of schist \u0026amp; clay. After harvest, the wines are fermented in stainless steel \u0026amp; some are then aged under \u003cem\u003efleurette\u003c\/em\u003e (a thin veil of yeast) in 100-year-old, 500L foudres. The estate is managed organically, although is not certified.
