This is cool climate viticulture at its best. The vines are planted on a north\/westerly facing slope for maximum exposure to sunlight. Vine age at time of harvest is 28 years. The vines are dry grown, cane pruned and handpicked, which in turn encourages low yields. In the winery the grapes are 75% destemmed, 25% whole fermented in small open fermenters. The must is given around four days for pre-fermentation maceration and fermented using a range of yeasts. The fermentation takes around 21 days to complete. Post ferment the must is pressed using an airbag press and then settled for two weeks before being racked to barrel. In barrel full malo-lactic fermentation is carried out. It's clear that while these are wines that typify modern Burgundy, where succulent fruit takes the stage early on making them hard to resist, yet the structure sits under the hood in the best wines allowing them to age marvelously. This style seems to play right into the hands at Raphet, a Domaine whose wines are typified by bright and vivid fruit, intoxicating perfumes and just a sense of ethereal beauty. Pair that with the subtle changes seen since Gerard's daughter Marion has been handed the winemaking and viticulture keys, more density and a refinement of tannins to name a few, and you have the perfect storm for what is one of our most loved Burgundy imports. Make no mistake this is an estate whose star continues to rise, and while style here remains a constant, everything is now getting dialled in and turned up to a level where the wines not only grab your attention, but command it. The key to Raphet's success has always been built on their vineyard holdings. Their Bourgogne Rouge for example is drawn from lieux-dits surrounded by Grand Cru vineyards,  their Gevrey Chambertin is from a plot sliced out of Charmes-Chambertin, with vines creeping up to 100 years old. Their Morey St Denis combines fruit from two 1er cru sites, Clos des Ormes and Les Millandes, and yet is labelled, and priced, at the village level. Clos Vougeot is a vineyard where location can be the difference between transcendent and mediocre, and the Raphet's have a brilliant old vine parcel and make one of the finest wines you will see from this site. Celebrated oenologist Jean-Luc Columbo took a chance on Ehren, whom he had met the prior year. A Francophile since adolescence, Ehren threw himself into all aspects of what seemed like turn-of-the-century winemaking in age-old caves and endurance-sport viticulture on the terraced hillsides of Cornas. Despite the quality and the ever-increasing demand, Thierry and his family remain as humble and discreet as ever: there is no Instagram here! With each vintage, the wines here get purer and more refined. Thierry is great friends with Vincent Dancer, Marc Bachelet, Arnaud Mortet and many other young guns of Burgundy. He is part of a revolution that has been sweeping through the Côte d’Or: a zeitgeist being driven by a new generation. The wines of his father were always good, in no small part due to the quality of the holdings. However, it is strikingly clear to us, and regular visitors like Allen Meadows, that this invigorated address has well and truly kicked things up a gear and now bears comparison with the very best that the Côte de Beaune has to offer. The Pillot’s farm first class holdings in some of Chassagne’s greatest vineyards; La Romanée, Les Grandes Ruchottes, Les Caillerets and La Grande Montagne. The Domaine also makes a stunning Clos St-Jean from the heart of the original Clos traditionally called Chassagne du Clos Saint-Jean. The Pillot family owns just over one hectare here—split equally between Pinot Noir and Chardonnay—and are, in fact, the largest owners in the Clos. In the cellar, the winemaking is geared towards preserving freshness: this is a Domaine obsessed with tension, and Pillot’s whites deliver these qualities in spades. Thierry prefers to crush his grapes before pressing (for lees) and there is no settling, temperature control or battonage. The grapes simply ferment on high solids and wild yeasts at their own pace. Large-format casks of 350 and 500-litres are the fermenting and aging vessels of choice. The whites are fermented wild and matured for 12-18 months on lees in these barrels, before six months in tank. The lees are never stirred, and the wines are bottled unfiltered. Thierry Pillot’s red wines have really come of age in recent years, to the point where they now hold their own compared with the Domaine’s whites. Pillot’s friendship and gentle rivalry with brother-in-law Arnaud Mortet may have played a part in this improvement. Calvert Vineyard is located on Felton Road and is just 1km east of The Elms Vineyard and the winery. The soils at Calvert are deep heavy silts with a thin layer of loess topsoil. Meticulous summer management of a single vertical shoot positioned (VSP) canopy ensures even and early fruit maturity. Shoot thinning, shoot positioning, leaf plucking, bunch thinning and harvest are all carried out by hand to ensure optimum quality fruit. Cover crops are planted between rows to assist in vine balance and to improve soil health and general biodiversity. The unique gravity flow winery enabled the grapes to be gently destemmed directly into open-top fermenters without harsh pumping with approximately 25% retained as whole clusters. Long pre-fermentation soaks of 10 days prior to fermentation with indigenous yeasts and punched down by hand up to two times per day with a total time on skins of 21-24 days. Pressed off and barrels filled immediately by gravity to the underground barrel cellars. Usually between 10-14 days from harvest, the wine is drained, the skins pressed gently and combined with the free run wine which is settled for a week or so before racking to barrel using gravity. Malo lactic occurs naturally in barrel and once complete the wine gets 60 ppm 502. Our Estate Pinot is a selection of the best barrels of our Leongatha vineyard of which 22% were new this year. All barrels are lightly toasted and extra tight grain oak. Barrels are topped and checked regularly. Wine stays in barrel for 14 months, then it simply gravity decanted off lees via a spigot inserted at the bottom of the barrel to a blending tank. No fining of any sort, or filtration before bottling in July 2022. For reds, Jean-Baptiste mostly de-stems and vinification is simple and straight forward – in stainless steel with indigenous yeasts, very gentle extraction (none or one punch-down per day), and very low added sulfur (5g\/hl). He prefers a short 4 to 5-day post-fermentation to pre-fermentation maceration for a more harmonious phenolic integration. For the whites, whole bunches are slowly and gently pressed.
