Before buying her own estate she trained at Château Latour in Pauillac, at Domaine de Montille in Volnay and at Domaine Roulot in Meursault. Bachelards has holdings in Fleurie (directly surrounding the Chateau), Saint-Amour and Moulin-a-Vent, and is doubly certified in organic and biodynamic viticulture. The vineyards in Fleurie include on of the only Monopoles in Beaujolais, Les Clos des Bachelards from which Alexandra makes her top wine. Vine age in her holdings is between 60-100 years old. Like the viticulture, winemaking is very considered The grapes are harvested by hand in crates, the wine is received by gravity, only indigenous yeasts are used and the maturing process is deliberately long using both new and old oak. Alexandra's wines are a style unique to Beaujolais. They are made without using carbonic maceration and are more akin in style to the great wines of the Cote de Nuits or the Northern Rhone, inky in the glass, smoky on the nose and richly extracted, terroir driven wines. All are farmed organically (certification is imminent) with some trials in biodynamics. Pauline Passot makes all her wines the same way: no inputs during vinification; wild yeasts; semi-carbonic fermentations; and minimal, gentle pump-overs to ensure pure and undistorted infusion of the fruit. He works alone in his vineyards where most of the material is gnarled, old goblet vines. His young parcels have been planted with selections massale from his older vineyards. Nothing is sweetened and nothing is taken away from the raw, visceral goodness of the juice. All of Bouland’s wines undergo natural, 100% whole-bunch fermentation, in the classic, Beaujolais, semi-carbonic style, before aging mostly in large, neutral oak. All the wines are bottled without fining and with only a light filtration.
