It fermented with 18% whole bunches to highlight the variety’s “distinctive ferrous qualities, fine structure and wild spice.” The new vintage spent 11 days on skins before being pressed to fine-grained large-format French oak, where it matured for 11 months. The classic sandy loams over ancient gravelly red\/brown loam over clay are especially suited to Cabernet Sauvignon and Margaret River’s remarkable “Gin Gin” clone Chardonnay. Malbec, Merlot, Cabernet Franc and Pinot Noir are also grown.  For much of the 1990’s the fruit was sold to nearby wineries, however in 1999 production under the Woodlands name began once in again. Since 2002 David Watson’s son Stuart has been the full time winemaker. His highly intuitive and laissez faire approach to winemaking, together with a superb vineyard site, has resulted in a flurry of interest from the media and fine wine collectors particularly for the Reserve Cabernet Sauvignon. Back in 1761, the Marques de Pombal assigned stone markers (feitorias) to delineate the Douro wine region, marking the best part of it. Quinta da Pedra Alta is the only vineyard in the Douro to have three of these granite markers, known as Marcos Pombalinos, on its property. A visit to Pedra Alta reveals the 35ha of terraced vineyards, the schist soils, the small parcels of different soils, the myriad of indigenous grape varieties (some 30+ years old) and the steep slopes that start with a breath-taking view at 550m and rush down to the river at 230m . This combination of variation of altitude and exposure to the sun\u003cbr\u003ehelps to give perfect balance and complexity in the wines. They grow only indigenous and traditional Douro grapes that are blended to produce a range of still wines and ports. As it is the tradition in the Douro, all of the wines are blends, producing a range of white, red and port wines considered the most faithful interpretation of the land. Quinta da Pedra Alta has six granite lagares for crushing the grapes. The lagares are a tradition that has lasted for centuries. This unique estate sprawls across 220 hectares with 170 hectares under vine. It is located close to the village of Maury in Roussillon, with the Corbières range to the north and the steep foothills of the Pyrénées to the south. Extreme temperatures, tramontana winds, 260 days of sunshine per year, and rocky schistose soil make the terrain ideal for Grenache and Carignan. Both grape varietals are resistant to wind and drought, and their roots manage to break through the schist, and express strong mineral characteristics in the bottle. Back in 1816, the bishop of Perpignan used one of his plots of land as a bet in a game of cards. He lost it to civil engineer Raymond Amiel, and this is how Mas Amiel originated. At the time, there were only 10 hectares of vines, and now it has grown to one of the largest estates in the region. After phylloxera ravished the vineyard (and wider France) in 1865, Mas Amiel was replanted. In 1907, the estate was acquired by Charles Dupuy, whose son and grandson continued to develop the vineyard until 1997. Then came Olivier Decelle in 1999.
